The ECHA-01 TOPS El Chappo, designed by Leo Espinoza, is not your Mama’s cleaver! A heavy duty chopper for home and field kitchen alike, the El Chappo Cleaver features a 6.0 inch fixed blade made of 1095 steel, .190 inch thick, with a Rockwell hardness of 56-58, a 5.88 inch cutting edge, an Acid Rain finish and hanging holes. The El Chappo has full tang construction for strength; black canvas micarta scales with finger grooves for comfort and secure grip, and a lanyard / hanging hole. A black Kydex edge cover is included. The TOPS Knives El Chappo has an overall length of 11 inches, and it weighs 15.9 ounces; 16.6 ounces with the edge cover. Made in the USA.
From TOPS: Leo Espinoza, TOPS’ President, has played with a few cleaver designs in the past and decided that with the success of the FMS knives and since TOPS is debuting a chef’s knife this year, it was time to make El Chappo happen.

While this cleaver can be used for heavier veggie chopping tasks, it’s primarily made to cut meat. With a blade length of 6″ and a thickness of 3/16″, this cleaver has the weight and capability to help you take care of whatever meat processing you may encounter. It’s made of 1095 high carbon steel and has TOPS’ new Acid Rain finish. It comes with a Kydex Blade cover that is held in place with an elastic shock cord.
